Here is a quick and easy recipe for wonderful Dutch Oven Tri-Tip.
1. Pick up a Tri-Tip from Costco that already has the rub on the roast or just get a good Tri-TIp and add your own favorite Rub.
My favorite is Shultz's (If you use your own rub, let sit overnight in fridge with the rub). 2. Set up your dutch oven with enough coals to cook at 325˚ F. (8 or 9 coals on the bottom).
3. Add a tablespoon or so of Olive Oil. Sear the roast on both sides for a few minutes just until you brown the meat.
4. Add about two glasses of a nice cabernet. (The reason you have to use a nice Cabernet is so you can enjoy the remaining two glasses)
5. (optional) Place several chipotle peppers in adobo sauce on the top of the roast This was a wonderful tip I learned from Dave (K6DTK).
6. Place the lid and load charcoal on top. (14 or 15 coals on top).
7. Turn the oven and counter turn the lid every ten minutes or so while drinking a glass of the Cabernet.
8. Take off of the coals, let sit for a few minutes, scrape the peppers off the top and baste with the hot wine reduction, slice and serve.

I have made this chicken dish for a long time in many variations but only recently did I make it in a Dutch oven and then a cast iron skillet.
Most everything is available at Costco in bulk or you can get these items at the grocery store. The most attractive thing about this dish besides the taste is that everything can be prepped at home. Dice the vegetables, use precooked chicken and even precooked rice or cook it yourself beforehand. It still comes out great. I make my own Parmesan sauce with whipping cream but you can always purchase freshly made sauce or make your own. I used to bring and use many spices for this dish. I found a Bruschetta seasoning at Costco so I use that along with fresh garlic.
