Pineapple Upside-Down Cake

Butter
Brown sugar
Maraschino cherries (optional)
One box of yellow cake mix prepared according to directions.
One can of sliced pineapple, drained

In an 8 inch dutch oven sitting on coals drop in knobs of butter brown sugar. Layer the pineapple rings in the bottom of the dutch oven and add cherries if desired.
Add the prepared yellow cake mix batter and cover the dutch oven with the cast iron lid and coals. Rotate the oven in one direction and the lid in the other direction until the cake is nice and brown. Use a toothpick or skewer to check for doneness it is good when the toothpick comes out clean.

Place an 8 inch plate on top of the oven and flip the cake out onto the plate.

I used to regularly base camp at a 3 to 5 day event that had restrictions on open fires. Back in the late 70s I took a class in alternate energy and learned about solar cookers and solar ovens. I always wanted to build a simple solar oven but never got around to it. While looking for solar voltaic panels during one of the OAUSA nets I ran across factory made solar ovens from Sun Oven International that where very similar in design to what I wanted to build. I though one would be a great addition to my cooking kit for my base camping event.

I picked one up and have been using it for about 10 years now. Here is the web site -

I see they have changed their name to the All American Sun Oven.

Something new for cooking I started using recently is the Volcano Cooker -

I often carry charcoal for dutch oven cooking and wanted a compact charcoal grill as a addition to my dutch oven paraphernalia. They also have an optional propane burner if you don't want to use charcoal. Hopefully I'll have some picture of this stove in use for the next time we do a net on camp cooking.
