On the net last evening I mentioned that NPR Science Friday had a nice segment on research to determine the best way to store wine that included authentic assessment. The results were interesting, but unfortunately I could not locate that segment. I do recall, however, that the least expensive solution, which also happened to be equal to the best tasting solution (maintaining the original quality) was to have the unconsumed wine poured into a bottle that had little or no air remaining. Definitely this is something that would be very hard to accomplish in the field, but at home is doable.
