Pico Pica comes in mild or hot. I use the hot version but I would suggest the mild one if you don’t like heat but want something more than catsup on your eggs.

Cholula Chipotle has that great smoky flavor that smoked jalepenos are known for.

Queen Majesty was found at Cost Plus World Market. It contains red habaneros and black coffee. This is my new favorite!

Sambal Oelek is great on Asians dishes. Sriracha is similar in ingredients and flavor.

Ghost Scream jelly is quite hot. I can’t get enough of it. I just scrape it out of the jar with Fritos Scoops.

The two small jars are from Arizona Gunslinger. Santa brought them to me. I find them useful on my business trips. Easy to pack and handy to use on my hotel eggs in the morning. Both are very tasty.

Pepplish Provisions, peach, agave and garlic. amazing sweet flavor is great in a fruit salad or added on chicken or fish

Mikey V’s peach habanero delight. As above, try it on fruit.

Arrogant Bastard Ale- yes it contains beer. Great flavor

Ghost Scream. Quite hot but not overpowering. Heavy on the vinegar and not sweet like their jelly. Great on pizza.

Pickappepa- Jamaican, contains raisins and a host of great ingredients.

The 20 hottest sauces on the market start at 1million SHU and skyrocket from there. I have tried several. The tiniest drop on the end of a toothpick will light up your mouth.

Recipes

The easiest and quickest hot sauce to make is Vinegar, Salt and your favorite Peppers. think Tabasco. There is a reason that militaries around the World put in their meals. It doesn't easily spoil. I make a variation with chipotle peppers, tomatoes, Garlic, salt and pepper. I don't care for vinegar so I use it sparingly. I process it until smooth and cook it. Then I bottle it in mason jars.

1 large can tomatoes 32oz
3 cloves garlic, crushed
salt and pepper to taste
2 Tablespoons apple cider vinegar
Peppers- These can be any type you are comfortable with. Add small amounts to a food processor with the other ingredients to taste.

Cook down to let the tomatoes darken. Then add water to make the desired consistency. Pour into sterilized mason jars and heat to seal according to standard canning practices. If you are going to consume within a few weeks, just place in the refrigerator. Believe me when I say your hot sauce won't last that long. When you make it to your taste, you will consume it quick.

I enjoyed all three as follows:
Kumana Avocado Hot sauce
Los Angeles
Key ingredients- onion, mango and bell pepper purée
Avocado purée, vinegar, cilantro, parsley, salt jalapeño,
Habanero.
I am a sucker for most anything avocado. I ended up pouring about 1/8 cup on a plate and dipping my sandwich. Great avocado flavor with a fair amount of heat. This would work well on Mexican, Tex-Mex, pizza or anything you would put avocado on.

Stone Tangerine Express IPA hot sauce

Key ingredients- Beer, tangerine juice, apple cider vinegar, habaneros, pineapple juice, honey, crushed red pepper, ginger and coriander.
As I have said earlier, there is an opportunity to spice up many dishes with a fruit filled hot sauce. This one is no different, great flavor and would be a great addition to seafood or chicken. This would make a great dip for shrimp scampi or cocktail. One of the more complex hot sauces when you review the ingredients. Addictive heat.

NOH Hawaiian Hot Sauce
Honolulu, HI
Key ingredients- water, vinegar, blended miso, soybeans, red
Pepper, sea salt, sugar, soy sauce, onion, garlic, black pepper.
I really wasn’t sure what to make of this one after I tried it. It is not particularly hot. Then I thought of one of my favorite dishes, Chicken Katsu. I could see emptying half a bottle on it. Pretty simple, not as sweet as a teriyaki sauce. Would make a great dipping sauce.
