I’m thinking of experimenting in camp with General Tso’s Tofu and Panang Tofu, induction wok style. These are usually made with chicken, but I’ve always like fried tofu. Would use peanut oil, so some may need to beware.

Oh yum, fried tofu!!!

On the question of infusing flavor into meat with an overnight stay in the fridge, I have found that the pressure cooker does it in 12 minutes. I will probably be doing an Adobo dinner on one of the nights.

Fried tofu … all of the texture of fine Wagyu beef without any flavor! It’s great at providing protein when you have a strongly flavored sauce which you wouldn’t ruin fine beef with.

I always pressure cook / Instant Pot the Adobo. I suspect folks saying to fridge it may not.
