Breakfast Tacos

Eggs, Chorizo Sausage, Onions, Corn Tortillas
Whenever you cook eggs it will always need lubrication. Butter, oil, or cooking spray usually works the best. This ensures your eggs will not stick to your pan (even nonstick) and a quick cleanup; especially on a morning meal so you can get on with your day.
On with the preparation hit the pan or griddle with 1-2 sprays of cooking spray and place over medium heat. squeeze off a 2-3 ounce ball of chorizo per person and flatten into a patty. You can adjust the spice by varying the amount used. Don’t worry it is not a hot spice, it is a flavor spice.

Cook chorizo until it just begins to dry. Add diced onion or potato leftover from dinner last night.

- Add Onion, Potato, use stuff left over from the dinner before.

Drain off any excess oil or blot with a paper towel. Add 2 large eggs per person and scramble together with the chorizo, onions, and potato.

As egg mixture begins to dry remove from heat and cover.
Whenever you cook tortillas you will get better flavor when cooking them up a bit. A common mistake is taking it from the package and just wrapping it.

- Warm Tortillas and Fill

Warm tortillas on hot griddle or pan until they just begin to brown. Fill with egg mixture and enjoy. You can moisten the tortillas with water for more tender tortillas, also help to transfer heat to the tortillas.
To get a nice fill-up heat up corn tortillas and melt some shredded cheese (blend, jack, mozzarella, or cheddar any nice melting cheese).

- Cheese Quesadilla

Quesdillas are a great quick snack with great stick to your ribs qualities. To get a nice fill-up heat up corn tortillas and melt some shredded cheese (blend, jack, mozzarella, or cheddar any nice melting cheese). Flip frequently so as to not burn the tortilla, this is a basic snack. You can always add your favorite meat ( steak, chicken, etc.)
