COFFEE

Whether its coffee at home in the morning, coffee on a camping trip, coffee at work, or coffee in the morning overlooking the fabulous scenery of a remote location, most of us enjoy a good cup, or two. Coffee, like so many things we enjoy, has become the subject of intense improvements in the last few decades. No longer are we confined to the coffee that is available at the average super market. Today, we have the benefit of multiple roasts, blends, sources, equipment, and tastes. All good things, by the way!!!

With all the coffee options available today, it still boils down, as it always does, to the taste of the consumer, not to advertising or hype. But, while we may have a favorite, it would be a shame to miss out on all the wonderful coffee options available today, many of which can turn out to be a new favorite. The net this week will be a great place to start recognizing how to not only get the most from your coffee, but an education on how to explore the world of coffee and what to look for.

The comparison to wine is a perfect example. Wine tasting today has risen to the level of "desirable destination get-aways." The lesson that so many wine drinkers have learned is that, "new favorites" are often the result of wine tasting at "new wineries." Coffee is just like that.

It is my pleasure to share a bit about coffee on tonight's net. While there are many options when it comes to coffee the best option is the one YOU like best. We do not believe there is only one way to roast, brew or enjoy coffee! So tonight we will discuss roasting and a little bit about brewing a great cup of coffee.

Along with Dave I will be your net controller for tonight's net. However, I have invited a guest speaker. Nathan is the head roaster for our coffee company. Nathan has 20 years of experience in harvesting, selecting, roasting and brewing coffee. It is my pleasure to introduce my friend Nathan M.

He will take you through a discussion about how to roast great coffee.

Brewing a great cup of Joe.

For the perfect pour over we recommend the following:

27 to 30 grams (about 1 ounce) of medium fine freshly roasted coffee.

The grind is a very important aspect of the coffee quality. Too course and the coffee is under extracted. Too fine and oddly enough the extraction falls off. This is because the water will channel through the coffee if too finely ground. The best grind is usually a medium fine grind. Depending on your grinder, experimentation is the best way to discover the optimal grind based on your taste.

Bad coffee is often caused by incorrect extraction - either too little or too much.

When under-extracted, the result can be Acidic, sour, and salty. When over-extracted, it may have a bitter taste with hollow notes that mask any interesting flavors from the beans themselves.

We recommend about a 15 to 1 ratio of 195˚ F water to coffee,

Add 55 grams of 195˚ F. water to create a bloom.

Then add 87.5 grams of 195˚ F. Water in four pulses.

We recommend the Kalita Wave 185 or Hairo V60 Ceramic Coffee Dripper for best results.

A third option for when you are on the trail:

Keep the water between 1/2 and 2/3 full in the dripper until the last pulse is finished.

This will make 405-450 grams (about 15 ounces) of the finest, smoothest, best tasting coffee...

For additional help... A good grinder is a must.

There are basically two types of grinders:

A blade grinder and a burr grinder.

First Blade grinders... Don't do that. Second, the only option is a burr grinder.

While a bit on the spendy side... The Fellow Ode Brew Grinder has Stainless Steel Flat Burrs. A burr grinder will ensure a consistent grind.

When on the trail, I use a portable electric rechargeable burr grinder

Finally two options of heating your water.

One is the the pour over coffee kettle.

Some of these options are a bit pricey. The Stagg Kettle is about $165 bucks and the Grinder is about $200... The Kalita Wave and the Hairo V60 drippers are not cheap considering what they are... but the right grind, with the correct brew temperature... with the correct extraction rate... Pure heaven.

PACTOR UPDATE

It's only been 10 years, but it has fianlly happened. The FCC finally approved the use of P4 modems. Here is what the ARRL reported:

ARRL The National Association for Amateur Radio® reports that earlier today, the FCC Commissioners unanimously voted to amend the Amateur Radio Service rules to replace the baud rate limit on the amateur HF bands with a 2.8 kHz bandwidth limit to permit greater flexibility in data communications.

“The Federal Communications Commission today adopted to incentivize innovation and experimentation in the amateur radio bands by removing outdated restrictions and providing licensees with the flexibility to use modern digital emissions,” announced the FCC.

Even with the limitations of the P3 modems, these are the pictures that I have been able to send back to family and OAUSA members to be posted on the website. With the addition of P4 modems the speed of transmissions for both emails and pictures is 2 to 3 times faster, and close to what we experience at home.
