actually....you are right and mike is going to start the pig sometime friday night i believe...so it'll be ready for the sat night feast. i guess i meant or should have said....that i'll be there saturday morning sometime....drinking all day for 9 hours...until the pig comes out of the pit. :)

If my calculations aren't screwed up then you'll need to cook a pig of that size for more like 16 hours unless you have plans on superheating the rocks somehow. I hope I can make this. We'll see what happens.
The point of the rocks are to truly heat them as much as possible, all the research I have done suggests keeping thi fire going overnight on the rocks then aranging the rocks to accomidate the carcass, then you put some rocks into the cavity, drop the bananna stalks in and set the pig on top, you cover the hole with soaked burlap and a thick cloth tarp then shovel sand on top to stop any of the steam escaping and 9 hours is the standard, you cant overcook it so a couple hours more wont hurt but we want to have the swine in the ground by dawn, this should give plenty of time even if we go a bit longer it WILL be done by dinner time. I have done this before but we used volcanic rock, the plan now is to use found rock out there as to not need a truckload of forign rock to be left out there, Kinda sucks because I ecpect most of the found rock to be granite and it likes to pop and crack but we will compensate with mesqite coal. I have no doubt that this will turn out just fine. I really hope to see some more of this site folks out there. it's gonna be a great event.

folks are out there now..........windy..........but after a few drinks the sand doesnt hurt anymore when it hits your face. :)

i'm heading out tomorrow morning and should be there by noonish. hope to see some or all of you out there. its going to be a blast.
