Yes sir... Have someone set in your truck and keep the engine RPM to around 2500 to 3000 RPMs. Then when you are using the grinder just be easy on how hard you push the grinder/cutt-off wheel into the material. If you trip the inverter just turn off the truck and restart it; that resets your inverter's breaker. I'm thinking about installing a heavier duty inverter under the hood for this sort of thing and putting a 120V plug with sealing cover in the grill.
