Everyone who knows Outdoor Adventure USA knows how much we love great food in the Outdoors. We all know the best way to start a day on the trail is with a great breakfast meal.

Join us this week as some of us share our favorite recepies and tips for a great breakfast in the outdoors.

Whenever you cook eggs it will always need lubrication. Butter, oil, or cooking spray usually works the best. This ensures your eggs will not stick to your pan (even nonstick) and a quick cleanup; especially on a morning meal so you can get on with your day.

On with the preparation hit the pan or griddle with 1-2 sprays of cooking spray and place over medium heat. squeeze off a 2-3 ounce ball of chorizo per person and flatten into a patty. You can adjust the spice by varying the amount used. Don’t worry it is not a hot spice, it is a flavor spice.

Drain off any excess oil or blot with a paper towel. Add 2 large eggs per person and scramble together with the chorizo, onions, and potato.

As egg mixture begins to dry remove from heat and cover.

Whenever you cook tortillas you will get better flavor when cooking them up a bit. A common mistake is taking it from the package and just wrapping it.

Warm tortillas on hot griddle or pan until they just begin to brown. Fill with egg mixture and enjoy. You can moisten the tortillas with water for more tender tortillas, also help to transfer heat to the tortillas.


To get a nice fill-up heat up corn tortillas and melt some shredded cheese (blend, jack, mozzarella, or cheddar any nice melting cheese).

Quesdillas are a great quick snack with great stick to your ribs qualities. To get a nice fill-up heat up corn tortillas and melt some shredded cheese (blend, jack, mozzarella, or cheddar any nice melting cheese). Flip frequently so as to not burn the tortilla, this is a basic snack. You can always add your favorite meat ( steak, chicken, etc.)

Heat a few tablespoons of cooking oil in a pan over medium heat.

Lightly brown tortillas until they lightly crisp up, try not to make it too hard. It helps to spoon some of the hot oil over the tortilla as it cooks to speed things up.

Remove from oil and drain on a paper towel, try to keep it warm, I like to give it a little shredded cheese blanket. Immediately begin to fry an egg for each tortilla in the same hot oil. This is a quick process again spoon hot oil over the egg as it cooks and you may want to give your eggs a flip for the last ten seconds, (over easy style) or just cook it one sided (Sunny Side Up).

Gently top your tortillas with your freshly fried egg and top with your favorite warmed salsa. I also sprinkle a little cheese over the top as well.

Always practice proper hygiene when cooking outdoors.

Breakfast is one of the highlights of my trips with OAUSA.
I will post some of my own recipes, but also some from the group as I have tried to document the meals and also the process.

It seams we always have to plan for and around Saturday trail runs and breakfast takes some planning.

The first Breakfast meal on the list has become very popular and is what I like to call the JackWich. Thanks to Jack KK6WXQ with help from others. It really is quite a production with multiple griddles going at once. The added benefit of a breakfast sandwich is it can be taken on our trail runs.

Grands biscuit dough, cream cheese and you favorite jam. Simply stretch out the biscuit, add the cream cheese and jam. Fold over and brush with butter. Cook in a 350 degree oven for about 20 minutes.

Bread Pudding- this was cooked in my new Camp Chef combo oven and cook top. I really wanted the ability to bake a variety of menu items in a 9”x 13” pan.

The recipe is as follows:
To make both dishes I started with 1 1/4 loaves of white, Artisan bread. I used 6 large eggs, 1 cup of half & half, 1/2 cup raisins, 1 cup sugar or stevia. Fold the diced bread to the other mixed ingredients.
I then split up the bread mixture and added the juice of one lemon along with the zest, blueberries to one batch. The other received 1 cup chopped pecans, Carmel drizzle
In the middle and again on top.

Cook about 45 minutes until it is set firm. Enjoy.

Dave and Hector treated the group to a very special breakfast.

They both made their own Hollandaise sauces but the real winners were the people lucky enough to make it to breakfast on Friday morning. This is why I always arrive on Thursday!
