Don't know if you're still looking for firearms training, but I recommend Firearms Training Associates.
I've taken two courses. Excellent, safe, thorough instructions. PLENTY of instructors around, too.

On-target in Laguna Niguel has regular classes and runs courses for Orange County CCW permits as well.
