What's in yours? ( You do have one right?)
I have a small-ish oil drain pan and a roll of oil absorbing rags/mats. A trash bag of some sort is also a good idea as after a clean up everything can be a bit messy and smelly. I have also been thinking about keeping some kitty litter in the truck as well.
I would love to hear what you all have and why. I have yet to find a pre-packaged spill kit for overland type vehicles (doesn't mean that there isn't one).

I carry the same basic stuff you do.
I like your idea of roll of oil absorbing rag/mate. What brand? I may need some of these?
I don’t carry any kittle litter. My feeling has been I can’t carry enough to help much and have the plan to just haul away contaminated soil in trash bags. I’d like to hear more on people thinking about this issue.
For a catch tub I use and old plastic 1 gal oil jug with the side cut out. I store my new fluid bottles in it when stored. If I get a bigger than 1 gallion leak I would sacrifice my plastic camp wash tub.
I item I have you didn’t list is Mylar bags, which seem to be impervious to all the fluids in my vehicle. I put some gasoline as a test in one and it held up much better than the plastic trash bag I tested too. I have no idea how long a Mylar bag will hold these fluids; I did the test with less than a cup of gas, and only had it there a few minutes. I also tested these bags for hot motor oil, by taking my oil dipstick and wiping it off on the Mylar bag, it showed no sign that it was affected. I would agree 2 gals of gas in one Mylar bag would be VERY SCARY.

The trouble with kitty litter and other powder/grain types is... well do you carry a shop vac when you are out wheeling? 
Thankfully I have never had to clean anything up except in my driveway, which is a lot easier to deal with.

I carry a couple 3 mil trash bags, a roll of the heavy duty blue shop towels and a cheap but thick Mexican cotton blanket I used for inspecting the bottom of the rig. That blanket on top of a trash bag would protect the ground and easily absorb 5 quarts of oil.
